Picked up my ambo and getting ready to start the build. It will be a slow build, but I will update as best I can.

Removed all the "ambulance" and painted the lenses white to make it street legal...

Starting cutting out the cabinets to make room for the fridge and stove/oven.

Switched out the light bulbs for LEDs.

Could the grill lights be removed?

Yes, the grill lights will easily remove. I have actually thought about isolating those wires from the emergency circuit and use them for some LED flood light bars.

setting up a travel trailer for a friend to live in... need to do similar.. all the lights are brake light bulbs .. should not be too hard.
